When restaurateur Matthew Russo started Meramec Catering in the early '60s, he and his wife Fran operated out of a storefront in downtown Clayton. They saw themselves as wedding caterers.
<p>But faster than you can say Salvatore, the Russo's produced five children, and a rapidly growing business to manage. Today the family business comprises of four locations, offering: </p>

These folks offer the best in culinary/hospitality training, event planning expertise and the creative spark that distinguishes a caterer from a carryouter. Not that there's anything wrong with carryout. In fact, Russo's added this service early in the game, and has led the local catering industry in other trends that later became the norm. Russo's was a St. Louis pioneer in streamlining its entire operation with computer software developed specifically for the industry. Four members of Russo's staff are certified Executive Chefs, as designated by the American Culinary Federation. The staff regularly participates in both learning and teaching sides of continuing education for caterers. </p>
