Not that there's anything wrong with carryout. In fact, Russo's added this service early in the game, and has led the local catering industry in other trends that later became the norm. Russo's was a St. Louis pioneer in streamlining its entire operation with computer software developed specifically for the industry. Four members of Russo's staff are certified Executive Chefs, as designated by the American Culinary Federation. The staff regularly participates in both learning and teaching sides of continuing education for caterers.
